Things I learned on Pinterest: cheddar beer chicken

[originally pinned from Sandra Lee]

If you are a beer fan, you will love this chicken. I didn't love the chicken (too beer-y for me) but the potatoes were definitely tasty.

Cheddar Beer Chicken
4 servings; 3 1/2 to 4 1/2 hours cook time

1 large onion, peeled and diced *large chunks are good
4-5 medium Idaho potatoes, peeled and diced
2 boneless skinless chicken breasts, rinsed and patted dry
1 1/2 tsp garlic salt
1 1/2 tsp ground black pepper
1 can (10 oz) condensed cheddar cheese soup
1 cup beer, your choice *I used Budweiser because it was in our fridge
3/4 cup bacon crumbles

In a 5-quart slow cooker, combine onion and potatoes.
Season both sides of chicken breasts with garlic salt and pepper. Place in slow cooker on top of vegetables.
In a small bowl, stir together cheddar soup, beer, and bacon crumbles. Pour over chicken.
Cover and cook on LOW setting for 3 1/2 to 4 1/2 hours.

My suggestions:
I served it over cooked egg noodles and it was a great idea.
The flavor may turn out better if you use a darker ale. Maybe not so beer-y.

  1. Hmm interesting! I'm vegetarian but the potatoes and onions sound yummy... my fiance might really like beer chicken. I wonder if cooking it longer or hotter will get rid of some of the beer taste?
